Just made this one for my “We’re Outta Here” party

Kelly’s Cole Slaw

I got the start of this recipe off Allrecipes.com.  It was called “Sweet Restaurant Slaw” but I have substituted enough items and changed the amounts enough that I feel it is safe to call it my own.  I actually do that a lot, find a recipe or recipes, that sound good and then either switch out ingredients or alter the amounts so that it is more custom to my and my families tastes.  It is best made the day before.

Items needed:  Big bowl for mixing, smaller bowl for mixing, spoon/spatula, measuring cups/spoons

Ingredients:

1 16 oz bag cole slaw (I like it with the carrots already mixed in – makes it easy)

2 to 3 TBSP diced onion (I like some pieces smaller and some larger)

1/2 to 2/3 cup mayo (the original recipe called for “salad dressing” such as “Miracle Whip” – YUCK!  I only use Helmans)

2 TBSP veg oil

1/3 to 1/2 cup sugar (depends how sweet you like it)

1 to 1 1/2 TBSP vinegar – depends how  much tart you want (original recipe called for white, but I’ve used apple cider and also red wine and it was still yummy)

1 /4 tsp sale

1/2 tsp celery seeds

In larger mixing bowl, combine coleslaw and onion.  In smaller mixing bowl, combine all other ingredients until well blended.  Pour wet ingredients over dry ingredients and toss to coat.   Chill at least 2 hours, preferably overnight before serving.  ENJOY!
